Potato of love

My recent Penzey's order included a gift of a jar of Potato of Love. There are no instructions on how to use it but just a cryptic message to find a flavor to pair it with. I went to the website to discover it's tiny pieces of freeze dried purple sweet potato. There are a couple of recipes, but clearly you're supposed to experiment with it.

How would you use Potato of Love?

Sprinkle it on right before you eat; it'll be like freeze-dried marshmallows but, y'know, healthy!
