Brown sugar-glazed salmon.
Tossed green salad using Caesar dressing, which I make with generous portions of Parmesan and ground freshly black pepper. At the Korean greengrocer I got radishes, yellow and green peppers, snow peas, cuccumber, and a new supply of cherry tomatoes.
Dessert: my dessert friend brought me a package of Tate's oatmeal raisin cookies, so a few of them with decaf.

Lima beans
Yellow squash sliced and baked with seasonings and a but of cheese on top.

The First Mate was in a snit this morning because we have to cook some ground beef but shes tired of burgers and meat sauces for pasta. I suggested chili and its perfect since we can use up some stuff thats getting a bit old.
Ground beef, chopped onions, chili beans, chopped celery, chopped tomatoes, tomato sauce, chili powder, salt, pepper, Habanero hot sauce, Cumin and chopped garlic. When its cooked, well put it in large mugs, cover the chili with grated cheddar cheese and quick-broil them to melt the cheese.
Since well have the oven fired up, shes making fresh biscuits for dipping in the chili. Im making a small salad of greens and colored stuff like peppers, etc.
Were anchored near Cape Canaveral and the humongous Vehicle Assembly Building where NASA puts the rockets together is in our backyard. Space-X has a crewed launch scheduled for Monday afternoon. Itd be cool to see that!

with tossed green side salad with lettuce, cuke, onion, green olives, olive oil, balsamic vinegar, salt, pepper and garlic (you forgot to pick me up some tomatoes!) for husband.
A really easy prep for salmon, and my favorite:
Place salmon filets in a large bowl or gallon bag, with soy sauce, brown sugar, minced garlic, a wee bit of cilantro and sesame seeds (optional). Marinate in the fridge for a couple hours, then place in a skillet, marinade and all, poaching the salmon in it, turning a few times, until done. Great served with a baked sweet potato and some asparagus.

Stopped by with the cherry tomatoes but was met by ferocious black dog.
Got skeered.

(15,013 posts)I started marinating the pork tenderloin last night, and it is in the oven as I type. I'll let you know how it turns out. Wish me luck! hahahahaha
Opps. Forgot to say that the tenderloin is wrapped in banana leaves.
Also making baked shredded carrots and oven roasted potatoes.

(509 posts)Best name I can give it. It was the signature chicken dish from the Saigon restaurant and they called it Saigon chicken, so that wasn't much help tracking it down. They did eventually give a recipe to the paper before they (the restaurant) closed, so that was the main source.
It's a stir-fry with oyster sauce, hot peppers and lemon grass. However, according to the newspaper, sugar is added to a bare spot in the wok and allowed to strongly caramelize before adding the sauce mixture. I'd never heard of this before, but I've since learned that it's a real Vietnamese technique and is called 'caramelized' chicken, pork, whatever.
Anyway, I added green onions and pea pods and increased the sauce amount to allow for the increased volume. Maybe not traditional, but it was tasty. I added a small amount of black pepper, too.
I'll go down and clean the wok in a little while. DH, as always, called out to find out if I was burning something while it cooked; he'll ask the same as I'm heating the clean pan to dry and re-season it a little. I keep telling him that it's not really stir-fry if the smoke detector doesn't go off.
The wok was $1 from an estate sale. The previous owners had put it in the dishwasher and it was a lovely dull orange. It is now a shiny black. Some of my best stuff has come from the 'about to throw away' pile.
