pan after the butter has melted. Medium high heat. Then i crack open 3 eggs at different points along the edge of the pan on top of the spinach. Then i smash open the yokes but hardly mix the egg and the yolks. Add salt and pepper. Cook untill eggs are done. Do not flip. I call it smashed eggs and spinach. Spinach is hardly cooked. Egg yolks taste divine not really mixed with their whites. My late brother loved it.
