I haven't had pancakes since before Oct. 2019. Before that, I had traditional, high test pancakes about once a month or less. I don't know if I wanted the food as much as I wanted the comfort of the food.
I just learned about date syrup. Kroger advertised Date lady brand, with a picture of the back label and it said 0 carbs, and 13 grams of fiber. I think that is an error on that label, somehow. Because date syrup has 13 grams of carbs and 0 fiber. Anyway, I have it.
I made a 1/2 recipe of almond flour pancakes, with a regular slather of butter, and sparingly used the syrup. I won't lie-they weren't light and fluffy, but they looked like pancakes and I got a stack of 3. the recipe is simple, with on-hand ingredients.
White flour pancakes with syrup is about 90 grams of carbs. My breakfast came in about 30 carbs.
I might do the cloud pancakes next time, and see if I like the texture better.

I learned the hard way, that if I use vegetable oil (soy bean), I start gaining. So veg. oil, at least what I have, is off my list I lost around 50 lbs since Oct. 2019. I changed my diet to get my sugar down, and the weight loss was a bonus. I wanted to use up that veg. oil, and gained 6 lbs in less than 2 weeks. I realized I LIKE being thinner. I had to figure out what was making me gain. I stopped using the soy bean oil, and lost 4 of the 6 lbs. Weird!

While I love pancakes, I don't miss them. I usually have a half a cup of plain greek yogurt and cottage cheese with a tablespoon of uncooked oatmeal, flavored with stevia and sugar free strawberry or blueberry syrup. I also use this recipe for my desert many times and substitute a tablespoon of sunflower seeds.

The cloud pancakes would be fluffy, and they have a good flavor. Another easy recipe, with maybe 3 ingredients.

(18,111 posts)The problem is usually regarding sugar. I need to limit my sugar and have found this very frustrating while doing pickup orders.
When I call these errors to their attention they say they'll look into it and point to the disclaimer next to the nutrition information.

(18,985 posts)but on checking other labels, saw the Kroger label info couldn't be correct. I got 2 bottles of date syrup from Amazon. Gave one to my daughter, who is a renal dietician. She is always looking for food items that her patients might use and like.
I cut back on sugar and carbs Oct. 2019. It really helps to have a knowledgeable person willing to advise. I've learned more and more from her, and from other people who are limiting carbs and sugars for their health. My sugar has been normal, or close to normal since about January 2020. I avoid concentrated sugar, and try to have no more than 100 carbs daily.

(24,149 posts)I really didn't like them and hubby hated them. Tried several versions and think I may have tried other flours too, but never found anything that would be tasty and somewhat fluffy and didn't have gritty textures. I like wheat pancakes, so can do without super fluffy, but just couldn't tolerate the texture and consistency of the others. I gave up on anything with flour while on Keto for a year. My husband hated Keto, and he's the cook, so I gave it up and a 2 years later we switched to WW. I weigh less now than I did with Keto and my stomach feels better without all that fat.
Peanut butter fudge is a delightful dessert that is very low carb and so is the red pepper dark chocolate fudge - both made with coconut oil and monk fruit or stevia sweetener. Let me know if you want those recipes, both are super simple and delicious. I'd always have to make extra for my son to eat, he loves these too. The hardest part is finding peanut butter without sugar, lol. I ended up just getting the fresh ground peanut butter at the local market, no additives! The dark chocolate fudge is intensely chocolate, with a hint of spice.
Anyway, hoping you can find the mystical perfect recipe for very low carb pancakes, I never could. If you ever perfect it, let us know! I adore pancakes and would love to have a good low carb alternative.

(18,985 posts)I recently found a dark chocolate bar with almonds at Aldi's, 12 grams of carbs in a serving. I'll have 1/3 of a serving with some extra almonds. After a long time without chocolate, it satisfies. I like pb on a graham cracker. If I have either of those, I don't eat the whole serving listed on the box.
I use Kroger peanut butter. 2 grams of added sugar.
I use stevia, but I don't like the aftertaste in baked goods. My solution was to sprinkle some on when I served it. I like making bread pudding (I make my own bread, no added sugar, and use the end if I want a creamy dessert). I found a recipe for almond flour gingerbread cookies. I use the molasses, but skip the stevia. I make a cream cheese frosting and put plenty of vanilla and stevia in it to top the gingerbread. Also a keto cheesecake dip I like on graham crackers. And a really good almond flour pastry dough that worked for a pizza crust, too.
I don't indulge in bakery and sweets often. Sometimes, if I know I have something yummy, I can't leave it alone. Better not to have it at all
