I thought I could get the calories I needed to stabilize my weight, but I couldn't eat enough calories to kept my weight up without bread, cheese, and meat. I think brow rice could help because it has 200 calories per cup. I made some bean and rice tacos, but that didn't provide 300 cals. I lost eight lbs over the past few weeks. Maybe a bit of deep fried veggies would help? I'm from Kentucky and we believe, "if you can't deep fry it, it ain't food."
So, have any advice for a resurrected vegetarian that needs to keep from wasting away?

I went vegan for a little over a year starting in 2012 when I was diagnosed with lymphoma-- had no trouble keeping weight on. unfortunately. :> )
Weight is still there. Lymphoma is gone.. knock knock knock

Potatoes don't settle well with me, but I try.

But sounds like you enjoy it, which us great, the more things you can eat the better.
Oh, if you like dumplings..from all over the world, there many many so delicious kinds..
My favourites are many Chinese types, especially xiao long bao- the soup dumplings famous around Shanghai, and the wonderful Sichuan dumplings, won tons, actually, in a sweet chili sauce.
Many are also vegan as well.....

(24,324 posts)I had diffuse large B-Cell lymphoma in one place on my spine..
Had surgery, 3 months of chemo (just 4 5-hour sessions) R-CHOP, 4 lumbar punctures and a bone marrow extraction...
I was in a very good clinical trial at a very good cancer center to try to avoid radiation....

(92,819 posts)I ate soy products and "fake" meat for years before my cancer but had to include the real thing back into my diet once my weight got dangerously low. You don't want that to happen. I was in the hospital for a month and I got nutrients through IVs and shots. My blood stopped clotting and my body wasn't functioning properly. My hair was falling out and doctors who were smiling when they came through the door stopped cold when they looked at me, their smiles wiped from their faces. That said more about my condition than any of their words. I had 6 doctors on my case, including my oncologist, before the month was over. It would not be an exaggeration to say I was dying.
I'll be ever so angry at you if you get to that point! Sad, worried, yes...but still angry.
If you can swallow fried veggies, go for it.
Just do whatever it is you have to do!
Please.
Plan menus with calories in mind. Same as when dieting but only the reverse. You want the calories.

(52,259 posts)or shop often buy and make stuff in batches. Cookies have a lot of calories. If you need to be reminded to eat, keep them all over your place on dishes (visual reminder) especially by your TV chair and bed.

Crepes with Havarti cheese sauce. Delicate, flavored with dill. White sauce, add havarti and dill, slow melt. Fill crepes. Yummy!
Very fattening.

For brunch I am now making a simple favorite of mine from the Jinagnan region of China, meaning 'south of the river.' the Yangtze in this case- west and south of and including Shanghai-- one of the great 4, or 7-depending on how one counts- cuisine of China.
Xia Ren Chao Dan - golden scrambled eggs with shrimp. -- a little potato starch, white pepper, salt, green onion, Shaoxing wine.... um delicious....

(52,259 posts)stick with high fat foods and not high sugar. Nuts and nut butter have calories and nutrition as you know. Cheese and ice cream are also good sources of fat and are tasty too.

(776 posts)but if you soak it in water for a day or 2, it becomes a wonderful, tasty and creamy cheese that's wonderful. Not strong like the original, but much easier to take.

(21,646 posts)Rice noodles with tofu and peanut oil that's some calories there. Nut butters are pretty high in calories . Quinoa or other grains with squash, pumpkin or succhini and tomatoe sauce
Unsweetened coconut
Plain Sweet potatoes or red ,white potatoes
Almond, Walnut or Cashew butter on celery sticks a few tbsp of those will get you over 300cal

(1,457 posts)...then you must be familiar with the trifecta: soup beans, corn bread, and fried potatoes. Slather one piece of corn bread with butter. Crumble one piece into your beans and add hot chow chow. Enjoy over and over--we do

My favorite dinner, I make that for my own birthday dinner every year. My friends know to never ask me out to dinner on my birthday.
Grew up in Arkansas, where beans are almost a daily staple. Mmmm.

(1,457 posts)Some people call them brown beans but I've always called them soup beans. No sugar in the corn bread and onion in the taters if you have it. We had it for dinner two nights ago...finishing off the corn bread tonight

(12,904 posts)When in her thirties, my aunt had trouble keeping weight on. She was otherwise healthy. A doctor told her to drink one juice glass (small glass) of wine, everyday, one hour before supper. It actually worked! The wine increased her appetite, and she never got heavy, which she was kind of afraid of.
And as an aside...eating raw carrots makes me have a stronger appetite; so much so that I won't eat them as a dinner appetizer, only as a snack.

(7,676 posts)Peanut butter can be ~180-200 calories for two tablespoons - lots of calories, easy to eat a lot of it.
Cut up some corn tortillas and fry some fresh chips to eat with refried beans, black beans, salsa, guacamole and black olives. (1 whole avocado ~235 calories and lots of good fat).
1/2 cup hummus has 200 calories, eat that on your corn chips, or with veggies and celery to boost calories.
Can you eat potatoes? I could eat mashed potatoes every night. ~215 calories in a cup (more if you like butter) and I always eat way more than that.

(7,676 posts)I got some "refried black beans" in a can once and they were superior to the regular ones (pinto?). I suppose I could just mush regular black beans into a paste for the same effect. I'm going to have to look up a black bean hummus recipe, that sounds amazing.

(978 posts)Rice and beans provide a complete protein. You don't have to mix them together, just eat them near each other.
Nuts provide "good" fat.
Olive oil, extra virgin is best, provides "good" fat and flavor.
FRESH IS BEST when it comes to spices.
Do Not Fear the Spice Rack. Enjoy what you eat, if you are 'going vegan' you can have flavor, you don't have to eat grass and twigs.
Get balanced nutritionally, you can get quite ill by neglecting that.

My taste buds are still not back all the way from chemo (which basically means that I can't eat Thai food lol), but my biggest complaint these days is that I have bald spots. I consider myself lucky. I smoked for many years and I'm actually glad I got breast, rather than lung, cancer. Lot easier to get a new boobie than to live without a lung.

(60,135 posts)I worked outdoors, so if I was going to get cancer it would either from the sun, or from smoking. Little did I know I had the HPV virus. Oh those wild and crazy 60's.
Here's hoping your cancer is gone for good.
Your taste buds will come back, how long it takes is dependent on your age. How are your salivary glands?
Bald spots suck. I guess you have been exploring the wonderful world of silk scarves, and dangling earrings. I lost my beard. I now have a pitiful goatee, and sideburns.

(2,312 posts)...added to the fluid of your choice. She's a mostly-vegetarian who is extremely athletic, and although quite petite, is very tuned-in to nutrition. She feels that those shakes are not really good for you.

Today I made braciole for my wife. I filled the tomato sauce with veggies and mushrooms, so I could enjoy my efforts. I wrapped the meat around a hard boiled egg and fresh rosemary. I steamed some Napa Cabbage with fennel seeds. All of that was on a bed of Israeli Couscous.
I used Berbere powder to give it a kick.

(35,523 posts)I figured fat would go down pretty easily - and wasn't off-limits since you were talking about fried foods. Fat has about double the calories of carbs/meat per gram. A little goes a long way. (And, many of the ones I've tried are really delicious.)

(2,921 posts)Soak in several washes of clean cool water over 48 hours. Pressure steam or slow cook. I Vitamx or blend with homemade kefir, yogurt or sweet miso, honey and three to five tablespoons of coconut oil. Fiber, protein, calories and accessible calories galore! Blend with ice if needed. Make ice from fruit juice enhanced with vitamins if you like!

I puréed some of my wifes Bison chili. It was wonderful, and easy to swallow.
My weight has stabilized at about 172, so I am doing the right thing.
I have been using red miso, and it is wonderful. There was no white miso, my go to miso.
