I'm updating this post to add Just Egg - frozen variety I thought it was great. I heated it in the microwave like the directions said & put it on a Gardein breakfast sausage on toast with Vegenaise & tomatoes. It was quite delish. I see a lot of bagel sandwiches in my future. It would also be great in stir-fry rice.

Bleu Cheese - OMG, it was amazing! It tastes exactly as I remember Bleu cheese. It's totally creamy, of course, without any chunks of "cheese" but the flavor is spot on!
Creamy Garlic - Garlic deliciousness! Great for dipping veggies & sandwiches.
Thousand Island - A perfect classic with no egg. I've been making my own thousand island with Vegenaise, but this is so convenient.
Next I'm going to try the Ranch & the Caesar, both of which my store carries, & the Miso Ginger if I can find it.

My husband made a spinach/mushroom omelet, which he loved. I'm not big on spinach so I scrambled some of the Just Egg, with some green pepper & a cut up Gardein sausage patty (already cooked in the micro). It was okay, but I wouldn't eat it again. But again, my husband thought the scramble was great.
I might try the Just Egg in some baked goods. Follow Your Heart has a vegan egg product too, but it's kind of pricey. https://followyourheart.com/products/veganegg/

Although it's been decades since I've eaten bacon, this tasted close to how I remember bacon, although, perhaps not as bacon-y as bacon. I cooked both sides for about 3 minutes on an oiled cast iron pan. It hardens up after taking off the heat. It's not exactly crispy, but you can break it apart. I made BLT sandwiches with the Thousand Island dressing from above & it was pretty good. There are only 8 slices in a package.
