1. Preservation Hall for the music. Historic site for local music. It’s a real national treasure.

2. There was a buffet of southern food and wonderful gospel music provided by a couple of choirs from Black churches. I’m not religious but I loved the music and went ther the last two trips I made to New Orleans. Been about 15 years so could be gone. It was near the convention center. You could ask the concierge or here is one I found with a quick google search.

With three nights, I recommend Galatoire's, Arnaud's and then a promising looking Creole dive. If you're willing to cross the river to Belle Chasse, I am found of Li'l G's Kajun. (Very much a jeans and t-shirt kind of place.)

It should be crawfish season. If you like crawfish, some place that just spreads it all out on a table. Comes with corn and potatoes and sometimes shrimp. I wish I could name a place for you but it's been too long ago that I was there. Crawfish boils are great fun.
Oh, Marie Laveau's House of Voodoo shop for a historical experience.
There's so many things. Have a blast!

If you haven't already got a place. They have standard rooms, and for 10-20 more, rooms that are almost apartments. Best thing, though, it's close enough to walk to the French Quarter places but far enough away to be quiet and not find puke in the gutters every morning.

I've been there several times, and was there 4 years ago for a meeting. Our group took one of the double-decker bus tours. It is a fun way to get some local info and see the city.

There are so many good restaurants, in the tourist area and out in the local parts of town. My favorites are Paul Prudhomme's place and the Court of Two Sisters. https://www.courtoftwosisters.com/ If you can get a reservation for the inner courtyard, it is such a great dinner experience.

I also thought https://stanleyrestaurant.com/menu/ was a great place for breakfast near Jackson Square

https://www.wakinbakin.com/ was a good local place for breakfast, and a couple other local places. Honestly, every restaurant there is good.

And this one, https://ghostcitytours.com/new-orleans/haunted-places/muriels-restaurant/ was one of my favorite in the French Quarter. It's supposed to be haunted, and they have a table set aside for the ghost. We never saw anything unusual, but the food is excellent.

Personally, as good as the tourist area places are, if you can go to local places around town, do so. It will not only be every bit as good, but a lot cheaper. I always try to go to local joints whenever possible.

I can't tell you specific ones, because it was about five years ago when I was last there.

Don't leave NO without a stash of pralines. There are a lot of different flavors so look around.

New Orleans has the best soul food in the entire country. If you don't believe me, then you can check out this Where Ya At article: https://www.whereyat.com/new-orleans-favorite-black-owned-restaurants and the first restaurant on that list says that they won the best fried chicken in America award!
