Enjoying a Royal Gin Fizz tonight.

A gin fizz is gin, lemon juice, sugar, and club soda. A Royal substitutes champagne for the club soda.

I wasn’t using the champagne for anything else right now.

I made a mimosa for Mrs. Aristus with the rest of the champagne.

When I want a sweet red, I get a bottle of Lambrusco. Bubbly reds are underrated.

The Royal is pretty good. My bar book has an entire chapter on champagne cocktails, but I so rarely keep it in the house, I don’t get to try them all out.
